Use & Care
Do not soak or put in a dishwasher.
Cut on a soft wood or quality synthetic cutting board, avoiding stone, glass, metal, or bamboo.
Do not cut bones, frozen food, or hard pits, or use the knife to pry or twist.
Store with the cutting edge protected.
Maintain the double-bevel edge with gentle, appropriate honing and sharpen as needed at the manufacturer's 16° per-side angle.
Shun offers a sharpening service for eligible straight-edge knives.

Its lightweight Japanese-made blade has a VG-MAX cutting core, Damascus cladding, and a contoured Pakkawood handle that remains comfortable in the hand.
