Wüsthof AMICI 7" Hollow Edge Rotoku

Thin Slicing with a Broad, Maneuverable Blade

The Rotoku profile combines a wide 2.2-inch blade with a slimmer cutting geometry suited to fine cuts and thin slices. The broad surface provides knuckle clearance during chopping and makes it convenient to move prepared ingredients from the cutting board.

Hollow-edge indentations form small air pockets along the blade to help reduce sticking as sliced vegetables and other foods move away from the steel.

Questions answered

Frequently asked questions

What is the WÜSTHOF AMICI 7" Rotoku best used for?

The AMICI Rotoku is designed for finely chopping herbs, slicing vegetables, and preparing boneless fish. Its broad blade provides knuckle clearance and supports thin, controlled cuts, while the hollow-edge indentations help sliced ingredients release from the steel.

How does a Rotoku differ from a traditional Santoku?

The Rotoku builds on the Santoku's versatility for meat, fish, and vegetables by adding three practical functions: chopping, serving, and transferring ingredients. Its curved edge combines the rocking motion of a European chef's knife with the precision of an Asian-style knife. The broad blade also helps scoop chopped ingredients from the board, while the hollow edge reduces sticking.

What is the advantage of the AMICI Rotoku's half bolster?

The lighter half bolster protects your fingers while making the knife easier to maneuver for detailed cutting. It also leaves the full cutting edge accessible for sharpening. Combined with the slimmer Rotoku blade, it makes the knife particularly useful for fine cuts and paper-thin slices.

What does the hollow edge do when slicing vegetables?

The indentations create small air pockets between the blade and the food, helping reduce sticking during repetitive slicing. This is particularly useful for thin vegetable slices and other ingredients that tend to cling to a smooth blade.
