Wüsthof AMICI 9" Double-Serrated Bread Knife

Clean Slices Through Hard and Soft Crusts

The 9-inch blade provides the reach needed for broad sourdough boules, sandwich loaves, and larger baked goods. Its double-serrated edge cuts effectively with less downward force than a conventional bread knife.

A short blunt section at the blade tip helps finish cuts through hard bottom crusts. Lift the handle slightly as the blade reaches the cutting board, then use the tip section to complete the slice.

Wüsthof AMICI 9" Double-Serrated Bread Knife

Natural Olive Wood, Precise Serrations

The AMICI bread knife pairs a specialized cutting edge with a handle made from naturally varied Calabrian olive wood. The material gives each knife its own grain and color, while periodic mineral-oil treatment helps maintain the wood through years of use.

From Our Founder

"The double-serrated edge is the practical reason to choose this knife. It gets through a hard crust without forcing the blade downward, and the olive wood handle makes every one slightly different."

Questions answered

Frequently asked questions

What is the advantage of the AMICI Bread Knife's double-serrated edge?

Its cutting edge places smaller serrations within larger teeth, creating additional cutting points that grip hard crusts with less downward pressure. This helps produce clean slices through crusty artisan loaves while protecting softer interiors from excessive compression.

Can this bread knife cut both sourdough and soft sandwich bread?

Yes. Its 9-inch blade provides reach for broad sourdough loaves, baguettes, sandwich bread, and rolls. The precision double-serrated edge cuts firm crusts while remaining controlled through soft interiors.

How does the AMICI Bread Knife differ from the CLASSIC version?

Both use forged German blades with precision double-serrated cutting edges. AMICI adds a natural Calabrian olive wood handle with individual grain variation, while CLASSIC uses a traditional synthetic handle. Their primary bread-cutting applications are similar, but their grip, appearance, and care requirements differ.

How should I care for the olive wood handle and serrated blade?

Wash by hand and towel-dry immediately, avoiding dishwashers and soaking. Condition the olive wood periodically with food-grade mineral oil. Protect the serrated edge during storage and use a sharpening service familiar with serrated knives when maintenance is needed.
