Wüsthof PERFORMER 7" Hollow Edge Santoku

Thin Slicing with Less Sticking

The 7-inch blade is broad enough for stable chopping and ingredient transfer while remaining slimmer than a typical European chef's knife. Its 1.8-inch width provides useful knuckle clearance for repetitive board work.

Hollow-ground indentations create small air pockets between the blade and the ingredient. This reduces sticking when cutting thin slices of vegetables, fruit, fish, sausage, and meat.

Wüsthof PERFORMER 7" Hollow Edge Santoku - Thin Slicing with Less Sticking

Wüsthof PERFORMER 7" Hollow Edge Santoku

Why Choose the PERFORMER Santoku

The PERFORMER Santoku combines a wide Asian-style blade with a low-friction DLC finish and textured handle. It suits cooks who prefer direct downward cuts, thin slicing, and a secure grip over the stronger rocking motion of a European chef's knife.

Questions answered

Frequently asked questions

What is the WÜSTHOF PERFORMER 7" Santoku best used for?

The Santoku is particularly useful for chopping vegetables, mincing herbs, slicing fruit, and preparing boneless fish or meat. Its broad blade provides knuckle clearance, while the fine cutting edge supports thin, controlled slices.

How does the PERFORMER Santoku differ from the Rotoku?

The Santoku has a relatively straight cutting profile that favors controlled downward cuts. The Rotoku combines an Asian-inspired blade with a more pronounced curve suited to rocking motions. Choose the Santoku for direct chopping and thin slicing, or the Rotoku if you regularly use both rocking and downward cuts.

What is the advantage of the Santoku's hollow edge?

The oval indentations along the blade help reduce food sticking by creating small air pockets during cutting. This is particularly useful when making thin slices of vegetables, fruit, fish, or other ingredients that can cling to the steel.

What do the DLC finish and Hexagon Power Grip add?

The Diamond-Like Carbon finish creates a hard, low-friction blade surface designed to resist scratches and wear. The textured Hexagon Power Grip handle provides a secure hold during repetitive chopping and precise slicing.
