Built for Sourdough and No-Knead Bread

The domed ceramic lid captures moisture released from the dough and holds it around the loaf during the early bake. That steam keeps the crust flexible while the dough expands, then allows the exterior to finish crisp and deeply golden.

The thick refractory clay holds and radiates heat evenly around the loaf for consistent baking without the weight, seasoning, or reactive surface of bare cast iron. Emile Henry sizes the pot for bread recipes using approximately 3 to 4 cups of flour.
