Wüsthof Tri-Stone Sharpener

Three Sharpening Stages in One System

The three stones let you match the abrasive surface to the condition of the blade. Start with the coarse J240 grit only when an edge needs significant correction, move to the medium J1000 grit to restore sharpness, and finish with the fine J3000 grit to refine the cutting edge.

The porous stones release fine abrasive particles when used with water. This water-and-particle mixture supports controlled metal removal as the blade moves across the stone.

Wüsthof Tri-Stone Sharpener

Use the Grit the Edge Requires

Not every knife needs all three stones each time. Use the coarse surface for substantial repair, the medium surface for normal sharpening, and the fine surface for final refinement. Working across the entire stone helps the surface wear evenly.

What stands out

Signature Features

Coarse J240 stone

Water stone construction

The stones are soaked and kept wet during use to release abrasive particles.

Questions answered

Frequently asked questions

What are the three stones on the WÜSTHOF Tri-Stone Sharpener for?

The coarse J240 stone is for significant edge correction, the medium J1000 stone restores sharpness, and the fine J3000 stone refines the finished edge. You can select the grit according to the condition of your knife rather than using all three for every sharpening session.

Should I use water or oil with the Tri-Stone Sharpener?

Use water. WÜSTHOF recommends soaking the whetstone before sharpening and keeping it wet during use. The combination of water and released abrasive particles supports controlled sharpening. Rinse the stone afterward and allow it to air-dry.

How does the Tri-Stone differ from a pull-through knife sharpener?

The Tri-Stone requires you to control the blade angle and sharpening motion yourself, giving you more flexibility over the amount of material removed and the finish of the edge. A pull-through sharpener uses fixed guides that make the process simpler but provide less flexibility.

Do I need to use the coarse stone every time?

No. The J240 stone is intended for edges that need substantial correction. For a normally dulled knife, begin with the J1000 stone and finish with J3000 if a finer edge is desired. Avoid removing more steel than necessary.
