The Ankarsrum is built around a rotating bowl rather than a tilting mixer head. For dough, the roller and scraper work against the moving bowl to stretch, fold, and develop structure while keeping the bowl open and easy to watch. You can add flour, water, butter, or inclusions without working around a mixer head.

Its motor feedback system helps regulate speed under load, while the gear unit is designed to keep the machine powerful and quiet.
