Roll the Sheet, Then Cut the Pasta
Start with the Lasagna Roller to take rested pasta dough from a thicker sheet down to the texture your recipe needs. The roller adjusts from 4.8 mm to 0.6 mm, giving you enough range for lasagna, ravioli, tortellini, and sheets that will be passed through a pasta cutter.
Once the dough is rolled, switch to the Fettuccine Cutter to produce uniform 6 mm ribbons. Ankarsrum recommends approximately 1 mm thickness for lasagna and 1.2 to 1.5 mm before cutting fettuccine.
