Questions answered
This honing steel maintains the cutting edges of straight-edge kitchen knives between sharpenings. Its 10-inch rod provides enough working length for chef's knives, carving knives, and smaller utility knives. Regular honing helps maintain clean cutting performance.
Honing helps realign an existing cutting edge without removing significant amounts of steel. Sharpening removes metal to restore an edge that has become genuinely dull. Use this honing steel for routine maintenance and a suitable sharpening tool when honing no longer improves cutting performance.
For knives used regularly, a few controlled passes on each side before cooking or when cutting performance begins to decline can help maintain the edge. Use light pressure and follow the appropriate angle for your knife. Frequent aggressive honing is unnecessary.
Both have 10-inch rods for routine edge maintenance. This version has a brushed stainless steel handle, giving it a different grip and finish from the traditional black-handled honing steel. The primary maintenance function is the same.
