Questions answered
Use the diamond sharpening steel when a knife has become dull enough that regular honing no longer restores clean cutting performance. Its diamond-coated surface removes a small amount of steel to sharpen the edge, while a conventional honing steel is better suited to frequent maintenance.
The fine diamond coating provides an abrasive surface for restoring dull or moderately sharp straight-edge knives. WÜSTHOF classifies this rod as 240 grit under the European grading system. It removes metal during sharpening, so it should not replace a conventional honing steel for everyday use.
The rod has a 0.75-inch-wide sharpening surface and a 10-inch working length. This provides a broad contact area for controlled sharpening strokes and enough reach to maintain full-size chef's knives and carving knives.
Wipe the rod gently with a damp cloth and towel-dry immediately. Avoid aggressive cleaning or unnecessary abrasion of the diamond-coated surface. Use light, controlled sharpening strokes and store the rod where its coating will not be damaged by other utensils.
