WÜSTHOF CLASSIC IKON 2-Stage Hand-Held Sharpener

Two-stage pull-through sharpener for coarse restoration and fine edge maintenance

The WÜSTHOF CLASSIC IKON 2-Stage Hand-Held Sharpener restores dull standard-edge kitchen knives without requiring the technique of a whetstone or sharpening steel. Its V-shaped guides set the sharpening angle, with diamond rods for coarse work and ceramic rods for refining the edge.

Wüsthof CLASSIC IKON 2-Stage Hand-Held Sharpener

Two Stages for Different Edge Conditions

Use the coarse diamond stage when a standard straight-edge knife has become blunt and needs its cutting edge restored. The harder abrasive removes more steel and should not be used for routine touch-ups.

Use the fine ceramic stage after coarse sharpening or when a moderately sharp knife needs refinement. A few controlled passes through the guide help restore clean cutting performance.

Wüsthof CLASSIC IKON 2-Stage Hand-Held Sharpener

For Standard-Edge WÜSTHOF Knives

This sharpener is intended for WÜSTHOF standard blades. Asian-style knives such as Santokus and Nakiris use a narrower edge angle and require a sharpener designed for that geometry.

Serrated blades should not be drawn through the sharpener. Individual serrations require specialized hand sharpening, typically by a professional service.

Questions answered

Frequently asked questions

What is the difference between the two sharpening stages?

The coarse diamond stage is designed to restore a blunt cutting edge by removing metal. The fine ceramic stage refines the edge after coarse sharpening or provides a lighter sharpening treatment when the blade is only moderately dull. Use the coarse stage only when necessary.

Which knives can I sharpen with the CLASSIC IKON 2-Stage Sharpener?

It is designed for standard straight-edge WÜSTHOF kitchen knives with an approximately 14.5-degree sharpening angle per side. It is not intended for serrated knives or specialized blades that require a different sharpening geometry.

Do I need sharpening experience to use this tool?

No advanced sharpening technique is required. The V-shaped guides establish the sharpening angle, so you can draw the blade through the appropriate stage with controlled, light pressure. Follow WÜSTHOF's instructions rather than forcing the edge through the guide.

How does this sharpener differ from the Universal 4-Stage model?

The CLASSIC IKON sharpener has two stages for standard straight-edge knives: coarse diamond and fine ceramic. The Universal 4-Stage model adds selectable settings for standard and Asian-style double-bevel blades, making it more flexible when maintaining knives with different edge angles.
