Questions answered
The coarse J240 stone is for significant edge correction, the medium J1000 stone restores sharpness, and the fine J3000 stone refines the finished edge. You can select the grit according to the condition of your knife rather than using all three for every sharpening session.
Use water. WÜSTHOF recommends soaking the whetstone before sharpening and keeping it wet during use. The combination of water and released abrasive particles supports controlled sharpening. Rinse the stone afterward and allow it to air-dry.
The Tri-Stone requires you to control the blade angle and sharpening motion yourself, giving you more flexibility over the amount of material removed and the finish of the edge. A pull-through sharpener uses fixed guides that make the process simpler but provide less flexibility.
No. The J240 stone is intended for edges that need substantial correction. For a normally dulled knife, begin with the J1000 stone and finish with J3000 if a finer edge is desired. Avoid removing more steel than necessary.
