Wüsthof Universal 4-Stage Hand-Held Sharpener

Four Stages for Two Blade Styles

The adjustable design provides separate settings for standard and Asian-style double-bevel knives. Each setting includes a coarse carbide stage followed by a fine ceramic stage, giving the sharpener four working positions in one compact tool.

The standard setting sharpens WÜSTHOF European-style blades at approximately 14.5 degrees per side. The Asian setting uses a 10-degree angle for double-bevel Santoku and Nakiri knives.

Wüsthof Universal 4-Stage Hand-Held Sharpener

For Straight, Double-Bevel Blades

This sharpener is designed for straight-edge, double-bevel kitchen knives. Serrated blades and traditional single-bevel knives require specialized sharpening and should not be drawn through the slots.

Questions answered

Frequently asked questions

What is the difference between the four sharpening stages?

The sharpener provides two stages for standard blades and two for Asian-style blades. Each setting has a coarse carbide stage for restoring a dull edge and a fine ceramic stage for refining it. This gives you four sharpening positions in one tool.

Can I sharpen both European and Asian-style WÜSTHOF knives?

Yes, provided they have compatible straight, double-bevel cutting edges. The standard setting sharpens at approximately 14.5 degrees per side, while the Asian setting uses 10 degrees per side for suitable Santoku and Nakiri knives.

Can this sharpener be used on serrated or single-bevel knives?

No. The Universal 4-Stage Sharpener is designed for straight, double-bevel blades. Serrated knives and traditional single-bevel Japanese knives require sharpening methods appropriate to their edge construction.

When should I use the coarse stage instead of the ceramic stage?

Use the coarse carbide stage when a blade is noticeably dull and needs its cutting edge restored. Use the fine ceramic stage after coarse sharpening or for lighter edge refinement. Avoid using the coarse stage unnecessarily because it removes more blade material.
