Wüsthof CLASSIC 7" Hollow Edge Craftsman

One Blade for Chopping, Boning, and Slicing

The Craftsman uses a 7-inch blade with more curve than a traditional slicing knife and a narrower profile than a standard chef's knife. The wide belly supports rocking cuts through vegetables, while the fine clip-point tip provides control when trimming meat, filleting fish, or working around poultry joints.

Hollow-ground indentations create small air pockets between the blade and the ingredient. This helps thin slices release from the steel during carving and repetitive prep.

Wüsthof CLASSIC 7" Hollow Edge Craftsman

A More Agile Alternative to a Chef's Knife

The Craftsman is narrower and more pointed than a traditional chef's knife, making it easier to guide around joints and through detailed meat preparation. It retains enough blade curve and width for chopping vegetables, then moves directly into carving and slicing without changing knives.

From Our Founder

"The Craftsman earns its place by moving comfortably between the cutting board and the carving board. The curved belly handles everyday chopping, while the narrow blade and pointed tip give you better access around meat and poultry."

Questions answered

Frequently asked questions

What makes the WÜSTHOF CLASSIC Craftsman different from a chef's knife?

The Craftsman combines a curved cutting belly, a narrow slicing profile, and a clip-point tip. It handles everyday chopping but is particularly useful for trimming meat, working around joints, and carving, where a conventional broad chef's knife can feel less maneuverable.

What is the 7-inch Craftsman best used for?

It is suited to chopping vegetables, trimming boneless meat, working around poultry joints, filleting fish, and carving cooked portions. Its curved belly supports rocking cuts, while the pointed tip gives you control during detailed preparation.

What does the clip-point tip do?

The clip-point tip provides a narrow, precise working area for guiding the blade around joints, connective tissue, and other tight spaces. It is useful for detailed trimming and separating meat from bone, but the knife should not be used to cut through bones.

What is the advantage of the Craftsman's hollow edge?

The hollow-edge indentations create small air pockets between the blade and the food during cutting. These help reduce sticking when carving thin portions of meat or slicing vegetables.
