Forged 8-inch carving knife with a hollow edge, made in Solingen, Germany
The WÜSTHOF CLASSIC 8" Hollow Edge Carving Knife is shaped for clean, even slices through roasts, poultry, ham, sausage, fruit, and cooked vegetables. Its blade is longer and narrower than a chef's knife, while the hollow-ground indentations help sliced food release from the steel.

From Our Founder
"A carving knife should move through a roast in one controlled stroke. The narrow blade and hollow edge on this one help produce cleaner slices without dragging the food across the board."

Questions answered
It is designed for long, controlled slices through cooked beef, pork, poultry, ham, and other roasts. Its narrow blade is also useful for slicing sausage, larger fruit, and cooked vegetables into even portions.
A carving knife has a longer, narrower blade that moves through cooked meat with less resistance during extended slicing strokes. A chef's knife is broader and better suited to general chopping and cutting-board preparation.
The indentations along the blade create small air pockets between the steel and the food. These help reduce sticking, making it easier for thin slices of roast, ham, and other cooked meats to release during carving.
A carving fork is useful but not required. It helps stabilize a roast while you make long slicing strokes and assists with serving. WÜSTHOF also offers a two-piece CLASSIC carving set that pairs a hollow-edge carving knife with a meat fork.
